Wait till you try these Gluten Free Almond Granola Bars! They are out of this world! I was inspired to make these from a recipe by Elana’s Pantry. My kids love granola bars, but most store bought granola bars may sound healthy but they are actually loaded with sugar and additives. These delicious homemade granola bars are sweetened with a very small amount of maple syrup and honey, which won’t spike you blood sugar as much as regular sugars will. They are also full of healthy fat from the nuts and coconut oil and packed with fiber from the flax seed meal. The topping of dark chocolate adds antioxidants and and minerals. All around, these are a great no-guilt breakfast option for kids as they head out the door, a post workout snack, or an afternoon treat when you are craving something sweet!

Ingredients:

2 cups raw almonds

1/2 cup flax seed meal

1/2 cup almond butter

1 tsp sea salt

1/2 cup coconut oil

2 tbsp honey

2 tbsp maple syrup

1 tsp vanilla extract

1 cup dark chocolate chips (70% cacao or higher)

1 tbsp coconut oil

sea salt

Directions:

In a food processor, mix together almonds, flax seed meal, almond butter and salt. Blend for 30 seconds.

In a small saucepan, melt the coconut oil. Remove from heat and add in the honey, maple syrup and vanilla. Add mixture to the food processor, and pulse on high until it starts top form a rough paste. Press into an 8×8 baking pan. Refrigerate for an hour.

In a small saucepan, melt the chocolate and coconut oil over low heat, stirring often. Pour the melted chocolate over the granola bars and spread evenly. Sprinkle with sea salt. Place back in the refrigerator for another 15-20 minutes, or until the chocolate hardens.

Cut into bars. Enjoy!
