Who doesn’t love cookie dough? My Gluten Free Chocolate Chip Cookie Dough Balls will be your new favorite healthy indulgence! These wonderful little treats are plant based and contain the perfect amount of sweetness. They are dipped in dark chocolate, which is loaded with antioxidants and polyphenols, so no reason for any guilt. They are the perfect answer to your sweet craving!

Ingredients:

1/2 cup almond flour

3 tbsp coconut flour

1/4 cup coconut flour

1/4 cup almond butter

2 tbsp coconut oil, melted

2 tsp vanilla

1-2 tbsp warm water

1/4 cup dark chocolate chips, chopped

Chocolate Coating: 

1/3 cup dark chocolate chips

1/2 tbsp coconut oil 

Sea salt for sprinkling

Directions:

In a large bowl, combine almond and coconut flour, and coconut sugar. In a separate bowl, whisk together coconut oil, almond butter and vanilla. Add the wet ingredients to the dry ingredients and stir until well combined. Add some water to create a coarse dough. Stir in chocolate chips. Place parchment paper on a baking sheet. Roll dough into 1 inch balls. Place the balls on the baking sheet and put into the freezer for 15 minutes. 

Melt the chocolate chips and coconut oil in the microwave, stirring every 15 seconds, until melted. Do not overcook or the chocolate will burn! Remove cookie dough balls from freezer and dip the balls in the melted chocolate. Sprinkle with sea salt. Return to the parchment lined baking sheet and freeze for another 30 minutes or until chocolate is hard. Slightly thaw before serving and store in a zip lock bag in the fridge. Enjoy!
