When you are craving oatmeal but avoiding grains, this Overnight Oatless Oatmeal is the perfect answer! I soaked nuts and seeds in homemade nut milk overnight and it tastes like a mix between chia pudding and oatmeal. You can top it off with dairy free yogurt like KiteHill and berries, or just enjoy it alone.

I did not add any maple syrup because we are on day 3 of my Fall Back into Health Reset and avoiding sugar, even natural forms, but feel free to add some maple syrup to sweeten it naturally if you are not doing my reset or Whole 30!

Ingredients:

2 cups nut milk (I make homemade almond/cashew milk with @addjoi)

1/3 cup chia seeds

1/4 cup hemp seeds

3 tbsp flaxseed meal

1/2 cup raw pumpkin seeds

1/2 cup raw chopped walnuts

3 tsp vanilla

1 tsp cinnamon

1 tsp sea salt

3 tablespoons cold brew coffee

2 tbsp maple syrup (optional, omit for Whole 30 and my Reset Challenges)

Directions:

Combine all ingredients in a mason jar. Shake well. You might need to stir it with a spoon to break up clumps of chia seeds. Let sit in the refrigerator overnight, shaking occasionally. Serve in the morning with berries, and dairy  free yogurt!
