You know I have the biggest sweet tooth and I am always looking for something dark-chocolatey and healthy to satisfy it. Well, this one did the job! I came up with a Chocolate Almond Butter Fudge that is out of this world. As always, it is really easy to make and can be stored in the freezer for up to 2 weeks.

You could always sub peanut butter or sunflower butter, and omit the cacao powder too. So many options and variations, and all are the perfect treat!

Ingredients:

1 cup creamy almond butter (I love Trader Joe’s Brand!)

1/4 cup coconut oil

1/4 cup honey

2 tbsp cacao powder

2 tsp. maca powder

1 tsp. vanilla

1/4 tsp sea salt

1/4 cup dark chocolate chips (I like Lilly’s or Enjoy Life)

 

Directions:

In a medium saucepan, combine all ingredients (except chocolate chips) over low heat. Mix well and stir until melted and combined. Line a small pan (8×8 or smaller) with parchment paper. Pour the fudge onto the pan lined with parchment paper and sprinkle chocolate chips on top. Freeze for 2 hours and then cut into pieces. Store in the freezer in a ziplock bag and take out a few minutes before serving! Enjoy!
