Happy 2020! Can you believe we are entering a whole new decade? It is exciting to see what the next 10 years will hold for us. What is on your menu for today? Black Eyed Peas are a Southern favorite to ring in the New Year. They are said to bring good luck and prosperity to the year ahead!

Not only do they bring good luck, but Black eyed peas are great sources of protein and fiber and are relatively low on the glycemic index. They also have lots of vitamins, like Vitamin A, iron, magnesium, and even folate, which helps support the nervous system.

I love to use Pederson’s Sausage. Not only is it delicious, but it’s Nitrate Free and does not have any Gluten, MSG or Sugar added. With all of these benefits of Black Eyed Peas, why limit them only to New Year’s Day!

Ingredients:

16 oz. Black eyed peas, rinse and sorted

2 tbsp. olive oil

1 medium onion-diced

2 garlic cloves, minced

3 slices of raw bacon, chopped

6 cups chicken stock

1-14 oz. can chopped tomatoes

14 oz. smoked sausage (I like Pederson’s Brand)

1 bunch kale, cleaned and choppped

2 tbsp parsley, chopped for garnish

Directions:

In a large pot, heat olive oil and add onion and garlic. Saute until soft, about 5 minutes. Add the bacon and cook until slightly crispy. Add the chicken stock, chopped tomatoes and black eyed peas and bring to a boil. Reduce heat and simmer for 1 hr or until beans are tender but not mushy. Add sausage and kale and cook for another 10 minutes. Sprinkle with fresh chopped parsley. Enjoy!
