I have been making these for years and can’t believe this is the first time I am posting this recipe! These little Energy Balls are the perfect snack post workout, or a great thing to send with the kids to school in their lunch. They are packed with healthy fat, fiber, protein and energy from the carbohydrates in the gluten free oats. I used almond butter, but you could easily sub in peanut butter, cashew butter or sunflower seed butter. You are going to love these!!

Ingredients:

1 1/2 cup Gluten Free Oats

3/4 cup flaxseed meal

3/4 cup almond butter

1/2 cup maple syrup

1 tsp vanilla

1/2 tsp sea salt

1/2 cup chocolate chips

Directions:

In a large bowl, mix all ingredients together. Refrigerate the mixture for 15 minutes, This will make them less sticky and easier to roll. Form into 1 inch balls and place on a baking sheet. Freeze for 1 hr. Store in the refrigerator and remove a few minutes before serving. Enjoy!
