I love my crock pot! I have been cooking in it so often. I used to think all crock pot recipes were unhealthy…boy, was I wrong! There are many easy, nutritious and delicious one pot meals that you can make. Here is a crock pot chicken with an asian flavor! It has become my daughter’s favorite meal! She is requesting it weekly! I serve it with brown rice and broccoli! It’s good enough to put any Chinese take out restaurant to shame…and healthier for you!
Asian Honey Crock Pot Chicken
1/2 cup honey
2 tbsp. apple cider vinegar
1/2 cup liquid aminos or tamari (GF alternative to soy sauce)
2 cloves garlic
2 tbsp. fresh grated ginger
1/2 cup orange juice
1 1/2 tbsp. sesame oil
3 tbsp. sesame seeds, toasted (optional)
4 boneless chicken breasts, cut into 1 inch pieces
Mix together all ingredients, except chicken, in a bowl. Place chicken in the bottom of the crock pot. Pour mixture over chicken and mix well. Turn crock pot on low and cook for 3-4 hours. Remove chicken from crock pot and place on a baking sheets, covered with foil and cooking spray. Broil in oven for a few minutes, until carmelized. Serve with brown rice and broccoli. Sprinkle with sesame seeds.
