I love chocolate!! I crave it a lot, too! Luckily, dark chocolate is actually good for you. It is loaded with antioxidants and flavanols and is a source of dietary fiber and magnesium. Consumed in small quantities, dark chocolate is very beneficial!
Sometimes, I just want a little something sweet and this chocolate truffle recipe I came up with always satusfies my sweet tooth with none of the guilt attached! And your kids will love them, too!!
Ingredients:
1/2 cup coconut oil
1/2 cup natural peanut butter (no sugar added…only ingredients should be peanuts, and maybe salt)
1/3 cup unsweetened almond milk
1 1/4 cup dark chocolate chips (at least 60% cacao)
Pinch of sea salt
Raw cacao powder, unsweetened coconut, chopped nuts, or sprinkles for rolling
Directions:
Melt the coconut oil in a small saucepan over medium heat. Add the peanut butter and stir until well mixed. Do not burn! Remove from heat and add chocolate chips and almond milk. Stir until melted and blended. Add sea salt and transfer to a bowl. Refrigerate for 2 hours or until moldable. Using a 1 inch scooper, roll into balls. Then roll balls in cacao powder, coconut, nuts, or sprinkles (kids will love sprinkles but it is a bit more of an indulgence because of the sugar!) Store in the refrigerator and snack on one when your sweet tooth comes on!
