Meatballs aren’t just for dinner! Adding sweet potato to turkey meatballs makes them suitable for breakfast, lunch or dinner! You could even eat these as a snack any time of the day or serve as an appetizer for a football tailgate.
The sweet potato acts as a binder so no need for bread crumbs or almond flour. Otherwise, just some simple herbs and spices make these meatballs super tasty!
Ingredients:
1 sweet potato, peeled and chopped
2 lbs ground turkey
2 tsp sage
1 tsp garlic salt
1 tsp salt and pepper
2 tbsp finely chopped parsley
Directions:
Boil the chopped sweet potato in a small pot of water and cook for 10-12 minutes after it boils, or until very soft and you can easily mash it. Drain and cool slightly.
Add all ingredients to a bowl and mix well.
