One of my husband’s favorite meals is a BBQ sandwich, so I knew my easy BBQ pulled chicken in a crockpot would make him super happy! Store bought BBQ sauces are loaded with sugar, but my homemade BBQ sauce is naturally sweetened with maple syrup. It is all about finding the right substitutes to make your favorite dishes healthy AND still taste great! My super simple BBQ pulled chicken can be served on a gluten free roll, with a side of coleslaw or even over a baked sweet potato.
Crockpot meals are perfect for busy days. You can let it cook all day, put it on warm when it is done, and eat whenever you are ready! Plus easy clean up since all the prep happens early in the day. I hope you enjoy this recipe. We will be making this one on repeat!
Ingredients:
2 lbs organic, boneless skinless chicken
1 tsp onion powder
1 tsp garlic powder
1/2 tsp paprika
1 tsp salt
1 tsp black pepper
For the BBQ Sauce:
1-6 oz can tomato paste
1/4 cup maple syrup
3 tbsp coconut aminos
1 tbsp brown mustard
1 tsp onion powder
1 tsp garlic powder
1/2 tsp paprika
1 tsp salt
Directions:
In a small bowl, mix together the onion powder, garlic powder, paprika, salt and pepper. Pat the chicken dry with a paper towel and rub the spice mixture all over the chicken breasts. Place the chicken in the bottom of a crockpot.
In the meantime, in a separate bowl, mix together all the ingredients for the BBQ sauce, stirring until smooth. Pour the BBQ sauce over the chicken breasts. Cook on low for 5 hours, or high for 3 hours, or until chicken shreds easily with 2 forks.
Serve with your favorite gluten free roll, and/or a side of coleslaw. Enjoy!
