Every time I have leftovers over ripe bananas, I usually freeze them for my smoothies. Sometimes I like to come up with another use for these bananas. This morning, I decided to make Peanut Butter Banana Muffins. The recipe uses natural peanut butter with no added sugar or oil. The only ingredients in the peanut butter is peanuts and sea salt. I used the Walmart Brand, Great Value.

There is no refined flour, sugar or oils in this recipe. The sweetness comes naturally from the ripe bananas, maple syrup and honey.

These muffins are so easy and make for a quick and healthy morning breakfast or a mid day snack!

Ingredients:

3 ripe bananas, mashed

1 cup peanut butter

2 eggs

2 tbsp honey

1/4 cup maple syrup

2 tsp vanilla extract

1 tsp baking soda

1/2 tsp sea salt

1 cup dark chocolate chips (optional)

Preheat oven to 350 degrees. Mix all ingredients well in a food processor, except chocolate chips. Once the batter is fairly smooth, stir in the chocolate chips. Spray the muffin tin with coconut oil spray and fill each muffin tin 3/4 full. Bake for 14-16 minutes or until slightly brown and a toothpick comes out clean. Allow the muffins to cool slightly before removing from the pan. Enjoy!
