Bananas are such a fabulous fruit. They are loaded with potassium, can boost your mood, help with muscle cramps during and after a workout, and give you the energy boost you need! I alway buy bananas at the grocery store,  but they tend to go rotten pretty quickly. And I hate to throw away my old bananas…but what do you do with your almost bad bananas? I make banana bread, freeze them for smoothies…and now even make a breakfast cookie! See the recipe below for another great and healthy option for your almost old bananas! Yummy!!

Oatmeal Banana Breakfast Cookiesimage

4 large ripe bananas

2 cups oats

1 tsp. cinnamon

3 packets stevia

1/2 tsp. salt

1/2 cup coconut oil

1 cup dark chocolate chips

3/4 cup chopped pecans (optional)

Preheat oven to 375 degrees. Mash bananas in bowl. Add remaining ingredients and mix well. Place rounded tablespoons of batter onto  greased cookie sheet. Bake for 20 minutes or until slightly brown. Let cool and serve for breakfast or as a power snack!
