I love making big, healthy weekend brunches! Sometimes, that means an egg bowl, sweet potato toast or 3 ingredient pancakes, but I was craving something different. My husband’s birthday was on Sunday so I decided to try a new idea….Sweet Potato waffles! They are gluten free and only have 2 ingredients, shredded sweet potatoes and eggs, plus a few spices. These savory waffles are absolutely delicious topped with an egg, and served with avocado and bacon. Everyone in my family loved them!

The waffle iron cooks the potatoes so they are tender, but also gives them a crunchy layer on the outside. I can’t even tell you how delicious they are! You need to put them on your weekend menu!

Ingredients:

2 sweet potatoes, peeled and shredded

2 eggs, beaten

1 tsp garlic powder

1 tsp onion salt

salt and pepper

Directions:

Heat a waffle iron. Brush the waffle iron with olive oil. Place the sweet potatoes in a bowl and squeeze the extra moisture out with paper towels. Add the eggs, garlic powder, onion salt, salt and pepper. Mix well. Place a handful of the sweet potato mixture into the waffle iron. Close the iron and let cook for 5-7 minutes, or until they are cooked through and slightly brown and crispy on top.

Serve with an egg on top, or drizzle with maple syrup. Enjoy!
