Here’s a spin on my traditional Salted Caramel Chocolate Cookies. I added unsweetened coconut and chopped pecans. Remember, these cookies do not have any flour, butter, or refined sugars added! You won’t believe how good they taste!

These are the perfect solution to satisfy your sweet craving. There are so many benefits to dark chocolate, coconut almond butter and pecans. Just be careful because they’re so good will want to eat the whole plate. These don’t last long in my house!


3/4 cup almond butter

1 egg

1/2 cup coconut palm sugar

1 tsp sea salt

1/2 tsp. baking powder

1/2 cup dark chocolate chips

1/2 chopped or shredded coconut, unsweetened

1/2 cup chopped pecans

Preheat oven to 375 degrees. Line a large baking sheet with parchment paper.

Combine almond butter, egg, coconut palm sugar, salt and baking powder in a large bowl. Mix well until fairly smooth. Add dark chocolate chips, coconut and pecan and mix until well incorporated. Drop by rounded tablespoons onto the parchment lined baking sheet. Bake for 8-10 minutes or until golden brown.
