I LOVE chocolate chip cookies, but the health coach in me knows they are not a good choice to have all the time. Especially if you have a sweet tooth, it can be hard to stop at just one. I crave dark chocolate and I know all the health benefits of it, so I decided to create a healthy chocolate chip cookie.  All of the pleasure, none of the guilt! These cookies are gluten and grain free, and Paleo. And they are delicious! Instead of using white sugar, I use coconut palm sugar. It is a great natural substitute and has that caramelized flavor, similar to brown sugar. It is lower on the glycemic index so it does not spike your blood sugar as much. My kids think these taste exactly like Nestle Toll House cookies! Just be sure toot eat the whole plate! They are so good!!

Ingredients:

1 1/2 cups almond butter (you can use Sunflower Seed Butter for nut allergies)

2 eggs

3/4 cup coconut palm sugar

1 tsp pure vanilla extract

1 tsp baking soda

1/2 tsp sea salt, plus a little extra for sprinkling

1 1/2 cups dark chocolate chips (for dairy/allergy free, use Enjoy Life Chocolate Chips)

Directions:

Preheat oven to 350 degrees. Mix almond butter, eggs, coconut palm sugar, vanilla, baking soda and salt in a bowl. Mix well. Add chocolate chips and stir until well incorporated. Prepare a baking sheet with parchment paper. Drop by rounded teaspoons onto the parchment paper, form into circles and press flat with your hands. Sprinkle with a little extra sea salt and bake for 10-12 minutes or until golden brown. Enjoy!
