I love quinoa and we have already talked about it’s amazing health benefits, including it’s whole grain qualities and protein packed punch! I have recently been making a quinoa tabbouleh! All the yummy qualities of tabbouleh, minus the gluten in the bulgher wheat and a better flavor. Add tomatoes, cucumber, feta cheese, lemon juice, olive oil, basil and mint, and voila! A delicious lunch or wonderful side dish for dinner!!
1 cup quinoa (any color…I chose red!)
2 tbsp. olive oil
Juice from 1 lemon
2/3 cup feta cheese
1/2 cup chopped tomatoes
1 chopped cucumber
fresh chopped mint, parsley and basil to equal 1/2 cup
salt, pepper to taste
Cook quinoa according to directions. Let cool slightly. Add olive oil, lemon juice, and remaining ingredients. Mix well, and refrigerate for 1-2 hours to marinate. Makes a wonderful lunch, snack or side dish for dinner!
