I love fall! The weather is so beautiful, there is always football on, AND most importantly, there are so many delicious pumpkin recipes to make. These Pumpkin Spice cookies are my newest creation. They are made with almond flour, and sweetened with maple syrup. They are dairy free and gluten free and absolutely the perfect guilt free treat!

Ingredients:

2 1/2 cups almond flour or almond meal

1/4 cup flaxseed meal

1/2 cup unsweetened shredded coconut

1 tsp baking soda

1/2 tsp kosher salt

1 tbsp pumpkin pie spice

3/4 cup pumpkin puree

1/2 cup coconut oil, melted

1/2 cup maple syrup

1 tsp vanilla

Directions:

Preheat oven to 375 degrees. Line 2 baking sheets with parchment paper.

In a large bowl, combine almond flour, flaxseed meal, shredded coconut, baking soda, salt and pumpkin pie spice. Set aside. In food processor, add all the wet ingredients (pumpkin puree, coconut oil, maple syrup, vanilla) and blend until smooth. Add the dry ingredients to the wet ingredients and blend until fully combined.

Drop by rounded tablespoons onto the prepared baking sheets. Press cookies flat. Bake for 12-15 minutes, or until cookies are slightly brown. Let cool before removing from tray. Enjoy!
