What to do with leftover chicken or a whole rotisserie chicken? Make this Chicken Salad with tarragon, parsley and Pecans and @primalkitchenfoods avocado oil mayo. The herbs give it such great flavor. I love chicken salad and this one is really so easy to whip up! Follow these easy directions for a healthy Paleo, Whole30 and Anti-inflammatory meal!

Ingredients:⁣

2 chicken breast, cooked and chopped, or 1 rotisserie chicken with the bones removed, chopped into bite size pieces

2 stalks celery, chopped⁣

1/4 cup Primal Kitchen Mayo (plain or chipotle)

1 tbsp dijon mustard

1/2 tsp celery salt

1/2 tsp celery seed

2 tbsp fresh chopped parsley

2 tbsp fresh chopped tarragon

1/4 cup toasted chopped pecans

salt and pepper to taste⁣

Directions:

Mix all ingredients together in a bowl. Serve over lettuce!  Enjoy!
