I have made many variations of these cookies but I am pretty sure this combo is my most fav! There is really nothing better then the combo of peanut butter and chocolate. I use Trader Joe’s Peanut Butter, which only has 2 ingredients, peanuts and salt. These cookies are free of any flour, oil, butter or refined sugar. I have been using coconut palm sugar to bake with because it is lower on the glycemic index, so it won’t spike your insulin levels as much as other sugars do. It has a similar taste to brown sugar which makes it a perfect choice for these cookies.

Ingredients:

2 cups natural peanut butter

1 cup coconut palm sugar

2 eggs

2 tsp baking powder

2 tsp vanilla

1 tsp sea salt

3/4 cup dark chocolate chips

Sea salt for sprinkling

Directions:

Preheat oven to 375 degrees. Line 2 large baking trays with parchment paper.

In a large bowl, mix together peanut butter, coconut palm sugar, eggs, baking powder, vanilla and sea salt until mostly smooth. Add the dark chocolate chips and mix well.

Drop by rounded tablespoons onto the baking trays, about 2 inches apart and flatten each cookie slightly with your hand. Sprinkle with sea salt and bake for 10-12 minutes, or until golden brown. Remove from oven and let sit for 10 minutes before removing from the tray. Enjoy!
