My husband and kids LOVE Meatballs!! This is a great week night meal. The meatballs can be made earlier in the day, or even the day before and reheated in the sauce when you are ready to eat! They are delicious, and healthy. You can use turkey, beef, veal, pork or any combo above! These are a guaranteed crowd pleaser!

Ingredients:

1lb. ground turkey or pork
1 lb. ground grass fed beef
1 egg
1/2 cup Parmesan cheese (omit for Paleo)
1 tsp. garlic salt
1 tsp Italian seasoning
2 tablespoons fresh chopped parsley
Ground Pepper

 

Combine all ingredients in a large bowl and mix well. Roll and Shape into 2 inch balls, and place on a baking sheet covered with parchment paper. Bake at 375 degrees for 15 minutes, or until meatballs are cooked through.

You can serve with your favorite marinara sauce, homemade or out of the jar. (I prefer to buy the store bought that has no sugar added! Tomatoes are sweet enough on their own. Be sure to read the labels!) I like to serve it over spaghetti squash, for my husband and I, or whole wheat pasta for the kids!
For the spaghetti squash, poke with a knife a few times. Microwave on high for 10-12 minutes. Remove carefully from the microwave as it will be hot. Cut open and remove seeds. Use a fork to pull squash from skin to form spaghetti like strands. Drizzle with olive oil and sprinkle with Parmesan cheese and chopped basil. Serve with meatballs!
