I think I just found heaven on earth! These muffins are absolutely amazing and I love that they contain all 3 macro’s (protein & fat=peanut butter, carb=banana and oats) in just a few little bites. Thank you @Ambitiouskitchen for this idea. I just love her recipes and this one has already become an all time favorite.

Sometimes, I come up with recipes on my own. They literally just pop into my head and I start creating. Other times, I get inspiration from wonderful and healthy food bloggers like Ambitious Kitchen. These muffins were her inspiration! I rarely make a recipe and follow the directions exactly. I always make a few tweaks and changes and try to come up with with something new.  Give them a try and let me know what you think!

Ingredients:

3 ripe bananas, mashed

1/2 cup natural peanut butter (nuts and salt only) ( you could also use almond butter or other nut butter)

2 eggs

3 tbsp maple syrup

2/3 cup almond milk

1 tsp vanilla

2 cups oats (I like @bobsredmill certified gluten free)

1 tsp baking powder

1/2 tsp cinnamon

1/2 tsp salt 

1/2 cup dark chocolate chips

Directions:

Preheat oven to 375. Line a muffin tin with paper cups and spray with coconut oil to prevent sticking. In a large bowl, add banana, peanut butter, eggs, maple syrup, almond milk and vanilla. Whisk well until almost smooth. There will still some lumps but that is ok. Stir in oats, baking powder, cinnamon and salt. Add dark chocolate chips and stir until well combined. Fill each muffin cup 3/4 full. Bake 18-20 minutes, or until a toothpick comes out clean. Enjoy! Try to not eat them all at once!?
