Meatballs are a week night family favorite in our house! Everyone likes them and they are easy to whip up. It is also a meal that can be modified to accommodate everyone’s different tastes.

My husband and I tend to watch our refined carbs, so we serve them over zucchini noodles, whereas my kids prefer them over pasta. You can make your own sauce or use your favorite jar of sauce to make it even easier! Just be sure to look at the ingredients and be sure there is no sugar added. Ingredients should be limited to tomatoes, olive oil, herbs and spices. You don’t need anything else to make a tasty and homemade sauce and the store brand doesn’t either!

 

Italian Meatballs

1 lb. ground beef

1 lb. ground veal

1 lb. ground pork

1 egg

1/2 cup ground almond meal

1/4 cup parmesan cheese (optional, omit if paleo)

1 tbsp. Italian seasoning

1 tsp. garlic salt

ground black pepper

Preheat oven to 375. Line a baking sheet with parchment paper. Combine all ingredients in a bowl. Mix well. Roll into 1″ balls. Spray with olive oil. Bake for 10-12 minutes or until cooked through and slightly brown.

Easy Homemade Sauce

2- 28 oz. can crushed tomatoes

2 tbsp. evoo

1 garlic clove, crushed

1 tbsp. Italian seasoning

1 tsp. garlic salt

salt and pepper to taste

Heat a large sauce pan over medium heat. Add the heat and garlic. Saute the garlic for 1 minute, but careful to not let it burn. Add the crushed tomatoes and seasoning. Reduce heat to low and simmer for 30 minutes.

Serve with meatballs over zoodles or pasta!
