It’s officially the first day of summer and I want to start off on the right foot! I wanted to make my kids a healthy breakfast, but something fun and yummy too! If you didn’t know it yet, we love Chocolate! And the good news is, dark chocolate is good for you! It is loaded with flavonoids and antioxidants. It is also great for your heart. (Good news since I am the wife of a cardiologist!) 

So I came up with a healthy version of double chocolate chip muffins! All the chocolatey taste with none of the guilt! 

Double Chocolate Chip Muffins
2 cups oat flour

1/2 cocoa powder, unsweetened
1 tsp. baking powder
1/2 tsp salt
2 packets stevia
1 cup almond milk
1/4 cup coconut oil
1/2 cup Greek yogurt, plain
1 tsp. vanilla
3 tbsp pure maple syrup or honey
2 cups dark chocolate chips
Mix all dry ingredients together in bowl. Mix all wet ingredients in another bowl. Add the wet ingredients to the dry ingredients and mix well. The batter will still be lumpy! Put muffins cups into a muffin tin and fill each cup with the batter till each is 3/4 full. 

Bake at 350 degrees for 20 minutes. Enjoy warm, and sprinkle with powdered sugar for an added treat!
