Moving is way more stressful then I had imagined! I am working on using all my tips to keep myself from getting overwhelmed. Did I mention the importance of eating healthy?! It is so easy to turn to junk food during times when we feel stressed and overwhelmed. Instead, increases your green veggies. They will give you energy, alertness and a sense of calm. This morning, I made a green kale salad with a light mustard dressing and topped it with 2 sunny side up eggs. Yummiest thing ever! It sustained me all morning. So simple, so easy, so delicious!
Green Eggs and Kale
2 eggs, cooked sunny side up
1 cup of fresh chopped kale
2 tsp. extra virgin olive oil
2 tsp. Dijon mustard
2 tsp. red wine vinegar ( or other vinegar of your choice)
Salt and pepper
Whisk Dijon mustard and vinegar together and slowly add oil. Add salt and pepper to taste. Toss kale with dressing. Top with freshly cooked eggs. Enjoy!
