Thanks to @ruthannebigleywellness for this quick and easy weeknight dinner. This 2 ingredient Chicken taco dinner couldn’t be simpler. You can serve it in Siete Tortillas, on top a salad, in quesadillas, or as nachos. Endless possibilities and easy clean up, too. I have made the same Chicken Tacos with Green Salsa so I was excited to try the red version. It is just as delicious and might be my new favorite!

Ingredients:

6 boneless, skinless chicken breasts

2 jars of red salsa (I like Trader Joe’s)

Siete Tortilla,

Toppings: Lettuce, tomato, avocado, jalapeno, cilantro

Directions:

Place the chicken on the bottom of the crockpot. Pour the salsa on top. Cook on high for 4 hours, or low for 8 hours. Spread the chicken. Serve in a Siete Tortilla, or on top of a salad. Garnish with lettuce, tomatoes, avocado, cilantro, jalapeños, and any other favorite toppings! Enjoy!
