I have a major sweet tooth and these gluten free cookies always seem to satisfy my cravings! I love them because they are free of any refined sugar, flour or oil. Plus they are easy to make…only 1 bowl needed, and they bake in less then 10 minutes. I have tried several different spins on this recipe. This time, I added white and dark chocolate chips for an extra decadent but still healthy treat!

Ingredients:

1 1/2 cup almond butter

2 eggs

3/4 cup coconut palm sugar

1 tsp pure vanilla extract

1 tsp baking powder

1/2 tsp sea salt, plus a little extra for sprinkling

3/4 cup dark chocolate chips (for dairy/allergy free, use Enjoy Life Chocolate Chips)

3/4 cup white chocolate chips

Directions:

Preheat oven to 350 degrees. Mix almond butter, eggs, coconut palm sugar, vanilla, baking soda and salt in a bowl. Mix well. Add dark and white chocolate chips and stir until well incorporated. Prepare a baking sheet with parchment paper. Drop by rounded teaspoons onto the parchment paper, form into circles and press flat with your hands. Sprinkle with a little sea salt and bake for 10 minutes or until golden brown. Enjoy!
