Have you been over indulging lately? This Detox Cleansing Veggie Salad is the perfect answer to get rid of the bloat! It is loaded with the most amazing combo of veggies, herbs, nut and seeds that will leave you feeling great. This salad not only have amazing crunch and flavor, it is super satisfying, too.

You can serve this as a simple plant based meal, or add your favorite animal protein such as salmon or grilled chicken. I usually make a big batch of this in the beginning of the week, and make the dressing in a glass jar, but leave it on the side. If the salad has not been dressed, you can store it in the refrigerator in an air tight container and pull it out during the week for lunch or dinner. All you have to do when you are ready to serve it is add some dressing. I hope this one makes your weekly rotation!

Ingredients:

Dressing:

1/2 cup lemon juice

1/2 cup olive oil

1 clove garlic, minced

2 tsp fresh grated ginger

2 tsp fresh chopped rosemary

1 tbsp honey

1/4 tsp cayenne (optional)

Salt and pepper 

Salad:

2 cups chopped kale

2 cups shredded cabbage 

1 head broccoli, chopped finely

2 shredded carrots

1 cup finely chopped mushrooms

1 red bell pepper, diced

2 avocados, diced

1/2 cup fresh parsley, chopped

1/2 cup basil, chopped

1 cup walnuts

1/2 cup pumpkins seeds

1/4 cup sunflower seeds

Directions:

For the dressing, place all ingredients in a glass jar and shake well. Set aside. 

For the salad:

Chop up all veggies and herbs listed above. Place into a large salad bowl. Top with nuts and seeds. Pour the dressing on top, toss well and serve. Enjoy!
