Granola is one of my most favorite treats but I don’t love all the sugar and carbs that come with the store bought brands. I came up with this grain free granola recipe that is void of sugar or oats, but loaded with nuts and seeds and coconut oil goodness! The protein powder adds extra protein and nutrients.

I did not add maple syrup to my granola or sweeten it since I am following my Reset guidelines. If you are not doing my reset or not following a strict Paleo or Whole30 diet, you can sweeten it naturally with maple syrup or honey. You could even add some stevia which would be compliant for all of the above! Personally, I don’t even think it needs the added natural sugar. I really like it served with some fresh berries for a little hint of sweetness!

Ingredients:

1/2 cup chopped raw pecans

1/2 cup chopped raw walnuts

1/2 cup raw sliced or slivered almonds

1/2 cup raw pumpkin seeds

1/2 cups raw sunflower seeds

1/4 cup hemp seeds

2 tbsp chia seeds

2 tbsp flaxseed meal

2 scoops chocolate protein powder (I like Sprout Living Chocolate Maca)

2 tsp maca powder

1 tsp cinnamon

1/2 cup coconut oil, melted

2 tsp vanilla

Optional: 1/4 cup maple syrup or honey (if you are not doing my Reset challenge or following Paleo/Whole30) or 2 tsp stevia

Sea Salt

Directions:

Preheat oven to 300 degrees. Combine all dry ingredients in a large bowl. In a small bowl, combine the coconut oil, vanilla, and optional maple syrup or honey. Pour the wet ingredients over the dry nuts and seeds. Mix well and spread on a large baking tray, sprayed with coconut oil, to prevent sticking. Sprinkle with sea salt. Bake for 45 minutes-1 hour, stirring frequently, until golden brown and slightly crispy. Let cool. Store in an airtight container for 3-4 weeks. Serve on top of dairy free yogurt, or with nut milk, or grab a handful as a nutritious snack. Enjoy!
