I can hardly believe there are only 23 days left till Christmas! With Thanksgiving being so late this year, it seems like there is not a lot of time to prepare. Decorating, shopping, cooking, parties, are all in fast forward right now. I do love the holiday season, but with it can come a lot of stress. This is the most important time to take care of yourself and find time to eat healthy, exercise and take a break. We managed to get the house decorated for Christmas this weekend, so today, I made this Chocolate Peppermint smoothie and took some time to finish some final touches, sit down, relax and enjoy.

The smoothie is full of anti-inflammatory ingredients and is perfect for breakfast or even a post workout snack. The frozen riced cauliflower helps make the smoothie creamy and also adds so many benefits. It is high in fiber and vitamin B and contains phytonutrients that help protect from cancer.

The best part of this smoothie is how good it tastes. The mint makes it taste delicious and also helps with digestion, improved energy and can even help fight a cold. Enjoy this Chocolate Peppermint Smoothie often during this Holiday Season!!

Ingredients:

1 cup almond milk (plus a little more if needed for blending)

1/2 frozen banana

1 handful spinach

1/2 cup frozen riced cauliflower

2 tbsp raw cacao powder

1 tbsp almond butter (or other nut butter)

1 tbsp flaxseed

3 sprigs fresh peppermint

1-2 drops peppermint essential oil

Directions:

Place all ingredients in a blender. (I use my Vitamin but any high speed blender will work). Mix on high or the smoothie setting and blend until smooth and creamy. Pour into your favorite glass and garnish with mint. Enjoy!
