Last week, I made plain overnight oats, so this week, I decided to make things fun and add 2 of my most favorite ingredients: chocolate and peanut butter. Oh my goodness, these are so good!! They were a huge hit with my whole family.
These overnight oats are great to whip up and store in the fridge for a few days. They are perfect for a quick breakfast, or post workout snack. The addition of chia seeds and flax seed meal pack in some extra Omega-3’s and fiber for more energy. And soaking the oats vs cooking them actually has some great benefits. It breaks down the starches and reduces the phytic acid, which makes them easier to digest.
Ingredients:
1 cup Gluten Free Oats (I like Bob’s Red Mill)
2 1/2 cups almond milk or other dairy free nut milk
3 tbsp peanut butter (nuts and salt only)
1 tsp vanilla
2 tbsp flaxseed meal
2 tbsp chia seeds
1 tbsp raw cacao powder
2 tbsp maple syrup
1 tbsp honey (optional, omit for vegan)
1/2 tsp sea salt
Directions:
Combine all ingredients in a mason jar. Stir well with a spoon to breakup any clumps and shake well. You may need to stir again. Store in the refrigerator overnight. Serve with dairy free dark chocolate chips and drizzle with extra peanut butter. (You can add a few teaspoons of water and mix well, so it makes it easy to drizzle on top!) Enjoy!
