Can we please agree on the fact that there is nothing better then the combo of peanut butter and chocolate?! These Chocolate Peanut Butter Cups are no bake and full of protein, fiber and anti-oxidants. You can store them in the freezer in an air tight container for a few weeks and just take 1 out for a treat. Enjoy a little indulgence without any guilt!
Ingredients:
1 cup creamy peanut butter, not sugar or oil added (I like Trader Joe’s brand)
1/4 cup maple syrup
3/4 cup almond flour
1 tsp vanilla extract
1/4 cup flaxseed meal
2 tbsp coconut oil, melted
1/4 tsp sea salt
1 cup dark chocolate chips
1 tsp coconut oil
sea salt for sprinkling
Combine the peanut butter, maple syrup, almond flour, vanilla, flaxseed, coconut oil and sea salt in a bowl. Mix well. Fill mini muffin cups 3/4 full with the peanut butter mixture.
In a separate bowl, melt the dark chocolate and remaining 1 tsp of coconut oil in the microwave (or a dutch oven), stirring every 15-20 seconds. Be sure not to burn the chocolate or overcook! Pour the melted dark chocolate over each peanut butter cup. Sprinkle with sea salt and freeze for a few hours. Pop the peanut butter cups out with a knife and store in a zip lock bag in the freezer.
