I have discovered the perfect Valentine’s Day dessert! Actually, this is the perfect dessert for any day of the week. Chocolate Mug Cake takes about 5 minutes to make from start to finish, and is one of the most delicious things I have ever tasted! It is dairy free, gluten free and Paleo friendly. This quick and easy recipe will make 4 small mugs (or ramekins), or 2 large mugs. It cooks in the microwave and will rival any flourless chocolate cake! This is made with almond flour, raw cacao powder, maple syrup and a few other simple ingredients.
Raw Cacao powder is full of antioxidants and flavonoids making it anti-inflammatory and so good for you. Here is another dessert that you can enjoy without any guilt!
Ingredients:
1 cup almond flour
1/4 cup maple syrup
1/2 cup raw cacao powder
2 tbsp coconut oil, melted
4 eggs
2 tsp vanilla
1/2 tsp sea salt
1/2 cup dark chocolate chips
Optional: Berries or chocolate chips for topping
Directions:
In a medium bowl, mix all ingredients together with a whisk until smooth. Pour into 4 small mugs or ramekins (I used small Flower pots!) or 2 large mugs. Microwave on high for 2-2/12 minutes, or until cake rises and is cooked through. Serve warm and top with berries, or extra chocolate chips. Enjoy!
