Tacos are such an easy weeknight dinner, but sometimes they can feel like dinner on repeat! This Cauliflower Rice Beef Taco Casserole is not boring and will add a little pep to your weeknight routine. It is also really easy to prepare and the cauliflower rice is sort of “hidden” in the casserole so you are getting your veggies in there, too!

You can keep it simple or add optional toppings like lettuce, diced tomatoes, avocado, black olives, jalapeños, cilantro, and sour cream. Remember that 7 layer dip you used to love that was so decadent?…this will remind you of it but with a healthy spin! You could easily serve this with Siete tortilla chips as a main dish or even an appetizer! My favorite thing to do is to show you that food can be easy to make, delicious AND healthy!!

Ingredients:

1 bag fresh Cauliflower Rice

2-3 tbsp olive oil

1 medium onion, chopped

1 red bell pepper, chopped

2 lbs Ground Beef, I like Butcher Box Grass fed (click here to find out more or order*)

4 tbsp Taco Seasoning, or 2 packets Trader Joe’s Taco Seasoning Mix

1 tbsp Tomato Paste

2 Cups Shredded Mexican Blend Cheese (optional, omit for Paleo or Whole30)

Optional Toppings:

Chopped Lettuce

Chopped Tomato

Sour Cream, or Kite Hill Almond Milk Yogurt

Sliced Black Olives

Sliced Avocado

Sliced Jalapenos

Chopped Cilantro

Salsa

Directions:

Preheat oven to 375 degrees. Spray a large 2-quart casserole dish with olive oil spray.

In a large saucepan, heat the oil over medium heat. Add the onion and bell pepper, and cook for a few minutes until they start to soften. Add the cauliflower rice and stir well. Cook for another few minutes and then add the ground beef. Stir well, and continue cooking until the beef is brown and cooked through. Add the taco seasoning and the tomato paste. Cook for another 3-5 minutes until all flavors are blended well together.

Pour the cauliflower beef mixture into the casserole dish. Top with shredded cheese and bake for 8-10 minutes, or until cheese is melted. You can also omit the cheese and just top with any and all optional toppings. I like shredded lettuce, tomatoes, black olives, avocado, jalapeños and cilantro! Enjoy!
