This cashew probiotic yogurt is one of my husband’s most favorite things! I decided to make it today because we are out of store bought yogurt. Now that I am mostly dairy free (except for some occasional cheese!), I typically buy KiteHill Almond Milk Yogurt. But there is seriously nothing better than this homemade cashew yogurt. It takes a few steps. First, you have to soak the raw cashews in filtered water overnight. Once the yogurt is blended and you add the probiotics, it needs to sit for 6-12 hours to culture. Although it takes some time, it is worth it! Not only is this yogurt delicious, it is Vegan (as long as your probiotics are vegan!) and super good for your gut!

This yogurt is delicious topped with berries, or grain free granola, such as Lark Ellen. You can enjoy it for breakfast, a mid-day snack or even dessert, topped with some dark chocolate chips!

Ingredients:

2 2/3 cup raw cashews, soaked overnight in filtered water

1 cup water

3 tbsp lemon juice

5-6 dates, soaked warm water to soften

1 tsp vanilla

1/2 tsp sea salt

3 probiotic capsules

Directions:

Drain the cashews and place them in a high speed blender. Add the water, lemon juice, dates, vanilla and sea salt. Blend until smooth. Pour the mixture into a glass bowl using a rubber spatula and open the probiotic capsules and sprinkle it on to the yogurt. Gently mix the probiotics into the yogurt. Cover the bowl with a cheesecloth or coffee filter and place in a warm dark spot fo 6-12 hours. Store in refrigerator. Enjoy!
