Are you looking for easy breakfast ideas for back to school? These Banana Granola Muffins are your answer. The are also the answer to those overripe bananas that you don’t know what else to do with. I use my homemade granola but you can use your favorite, healthy store bought granola, too.
These muffins are full of protein and healthy carbs and will give you energy all morning long! They also make a great post workout or after school snack.
Ingredients:
1/4 cup coconut oil, melted
1/2 cup maple syrup
3 over ripe bananas, mashed
2 eggs
1 tsp vanilla extract
1 tsp baking soda
1/2 tsp salt
1 1/2 cups almond flour
1/2 cup coconut flour
1 cup granola (click here for my homemade recipe)
Directions:
Preheat oven to 350 degrees. Line a muffin tin with paper cups or grease muffin tins with coconut oil.
In a large bowl, mix together the coconut oil, maple syrup, bananas, eggs and vanilla extract. Whisk until smooth. In a separate bowl, add together the almond flour, coconut flour, baking soda and salt. Pour the dry ingredients into the wet ingredients. Still until mixed well. Pour the batter into each muffin cup, filling 3/4 full and dividing evenly. Sprinkle 1-2 tbsp of granola on topmof each muffin. Press the granola slightly into the batter.
Place the muffins in the oven and bake for 18-20 minutes, or until a toothpick comes out clean. Let cool for 10 minutes, then remove each muffin from the tin. Enjoy!
