This Bacon Wrapped Pork Tenderloin has to make it’s way onto your table over the holidays! It was a huge hit with my family AND it came together in no time at all. I am a huge proponent of simple, healthy and delicious meals and this one sure does check every box! Serve this pork with roasted vegetables and sweet potatoes and a side salad for a winner meal!
Ingredients:
2 1lb pork tenderloins
1 pound bacon (no nitrates added. I like @pedersonsfarms)
3-4 tbsp olive oil
2 tbsp dried rosemary
salt and pepper
Directions:
Preheat oven to 425. Line a baking sheet with parchment paper. Rub the pork tenderloin with olive oil and rosemary. Sprinkle with salt and pepper. Place the bacon on the sheet, lining the slices up touching each other. Place the pork tenderloin on top of the bacon, in the center. Roll each slice of bacon around the pork tenderloin, overlapping slicers so they stay in place. Once it is fully wrapped, turn it over to tuck the seams. Bake for 30-40 minutes or until bacon is crispy and pork is slightly pink in the center.
Let the pork rest for a few minutes before slicing. Slice and serve with roasted potatoes and your veggie of choice! Enjoy!
