Happy Valentine’s Day!! Hope you are cooking for the one(s) you love!! AND, Don’t forget the dessert! I LOVE chocolate chip cookies, but the health coach in me knows they are not a good choice. Especially if you have a sweet tooth, it can be hard to stop at just one! I crave dark chocolate and I know all the health benefits of it,  so I decided to create a healthy chocolate chip cookie.  All of the pleasure, none of the guilt! These cookies are grain free, and Paleo. Instead of using white sugar, I use coconut palm sugar. It is a great natural substitute and has that carmelized flavor, similar to brown sugar.

Ingredients:

1 1/2 cup almond butter

2 eggs

3/4 cup coconut palm sugar

1 tsp. pure vanilla extract

1 tsp. baking powder

1/2 tsp. sea salt, plus a little extra for sprinkling

1 1/2 cup dark chocolate chips (for dairy/allergy free, use Enjoy Life Chocolate Chips)

Directions:

Preheat oven to 350 degrees. Mix almond butter, eggs, coconut palm sugar, vanilla, baking soda and salt in a bowl. Mix well. Add chocolate chips and stir until well incorporated. Prepare a baking sheet with parchment paper. Drop by rounded teaspoons onto the parchment paper, form into circles and press flat with your hands. Sprinkle with a little sea salt and bake for 10 minutes or until golden brown. Enjoy!
