It’s February and the weather here has been gloomy. Lots of rain and cold weather. The more time I spend stuck at home on rainy days, the more I crave chocolate! Plus, I am always looking for healthy, whole snacks for our family. Sooooo, I tried to create a granola bar that was healthier then store bought ones for my kids and gave me my chocolate fix! Give it a try! It was a hit with my kids….and my husband, too!
Homemade Peanut Butter Chocolate Granola Bars
3/4 cup dates
2 cups oats (toasted or raw)
1 cup almonds, pecans or walnuts (slightly chopped)
1/4 cup honey
1/2 cup peanut butter (preferably natural, freshly ground, with no added sugar)
1/2 cup dark chocolate chips (70% cacao)
Chop dates in food processor and grind until mashed or forms a ball. Put chopped dates, oats and nuts in a bowl. In a small saucepan, combine honey and peanut butter. Cook until melted over medium heat, stirring occasionally.
Add peanut butter mixture to bowl and combine all ingredients till well mixed.
Spread into a 8×8 pan, lined with parchment paper. Sprinkle chocolate chips on top and press into mixture.
Refrigerate for at least 30 minutes. Cut into squares or rectangles and enjoy!!
