I am always looking for a way to satisfy my sweet tooth with no guilt. Nestle Toll House Chocolate Chip Cookies are so good but they are loaded with ingredients that are not so good for us. These almond flour chocolate chips cookies that I made are gluten free and paleo friendly.
Instead of the traditional recipe, I used almond flour, a small amount of almond butter and coconut palm sugar. There are no refined sugars, flours or oils added. These cookies are such a great way to enjoy a clean dessert!
Ingredients:
1/2 cup coconut palm sugar
1/2 tsp. baking soda
1/4 tsp, kosher salt
2 tbsp. almond butter
1 tsp. vanilla extract
2 cups almond flour
2 large eggs
1 cup dark chocolate chips
Preheat oven to 375 degrees. Combine all ingredients except chocolate chips in a bowl. Mix well until smooth. Add chocolate chips and stir. Place parchment paper on a large baking sheet. Scoop the cookie dough onto the tray by level tablespoons. (I like to use a cookie scoop!) Flatten the cookies slightly.
Bake for 10-12 minutes or until golden brown. Remove from oven and let cool for 2 minutes. The transfer to a rack to cool completely.
