Sometimes, I miss eating oatmeal or other breakfast porridges as I am living the paleo, anti-inflammatory lifestyle. This chia pudding is the answer! Chia seeds are truly tiny miracles! Full of Omega-3’s, they help boost energy and stamina.
Chia seeds date back to thousands of years ago, when the ancient Mayans and Aztecs ate them as a staple in their diet. The warriors relied on these little powerhouses for energy during battle. Today’s runners also feel the same way about them.
The flaxseeds and hemp seeds both add fiber, healthy fats and protein. This is definitely a power breakfast post work-out or a great snack anytime of the day!
Ingredients:
1 cup homemade almond milk (you can buy store bought, but I promise homemade is so easy!)
1/3 cup chia seeds
1 tablespoon flaxseed meal
1 tablespoon hemp seeds
1tablespoon maple syrup
1 teaspoon vanilla extract
a dash of cinnamon
a twist of pink Himalayan sea salt
Combine everything in a mason jar and shake well. Refrigerate overnight. The chia seeds will expand and the mixture will turn thicker into a pudding! Enjoy with berries, nuts, coconut, or my fav, a dollop of almond butter on top!
