I have been making these yummy Protein Energy Balls for years and always try to make a little different version! They are the perfect post workout snack, or a great thing to send with the kids to school in their lunch. They are packed with healthy fat, fiber, protein and energy from the carbohydrates in the gluten free oats. I used peanut butter, but you can sub almond, cashew or sunflower seed butter. You are going to love these!!
Ingredients:
1 1/2 cup rolled oats
3/4 cup peanut butter
1/3 cup honey
1/2 cup flaxseed meal
1 tsp vanilla
12 tsp sea salt
1 scoop protein powder (I like Sprout Living Vanilla Lucuma)
1/2 cup mini dark chocolate chips
Directions:
In a large bowl, mix all ingredients together. Refrigerate the mixture for 15 minutes, This will make them less sticky and easier to roll. Form into 1 inch balls and place on a baking sheet. Freeze for 1 hr. Store in the refrigerator and remove a few minutes before serving. Enjoy!
