I love cooking once and eating twice. My ground chicken patties do just that. I made the patties and the first night, used them as a base for a Caesar Salad. On the next night, I topped the patties with marinara sauce and mozzarella cheese and turned it into a delicious chicken parmesan. My goal is to make healthy food taste great, and for it to be quick and easy to make!

Ingredients:

1 lb organic ground chicken

1 egg

1/2 cup grated parmesan cheese

1/2 tsp garlic salt

1 tsp Italian seasoning

1/2 tsp paprika

salt and pepper to taste

Directions:

Line a baking sheet with parchment paper and preheat oven to 425 degrees. In a large bowl, mix together all the ingredients. Divide the chicken mixture into 4  and place each on the parchment paper and press  and form into a round, thin patty. Bake for 8-10 minutes or until cooked through.

Set Aside.

For Ceasar Salad:

Ingredients: 

1/2 cup fresh lemon juice

A few dashes of coconut aminos 

2 tsp Dijon mustard

1/2 can anchovies (flats) or 2 tbsp anchovies paste

Place all ingredients in a blender and mix well. 

In the meantime, marinate

1/2 olive olive

2 cloves minced garlic

Let sit for 15 minutes

Strain the olive oil and garlic and pour into the blender. Mix well. Add salt and pepper to taste. Store in a glass jar in the refrigerator until ready to use. 

For the salad:

Place a head of chopped romaine lettuce in a large salad bowl. Pour desired amount of dressing on top. Toss well to coat. Place the chicken patties on a plate and top with the Caesar Salad. Add parmesan cheese and Enjoy!

For Chicken Parmesan:

Place the chicken patties on a parchment lined baking sheet. Top with marinara sauce (I like Rao’s) and top with mozzarella cheese and parmesan cheese. Bake at 425 for 10 minutes, or until cheees is melted and bubbly. Serve with your favorite vegetables, or a green salad. Enjoy!
