Overnight oats make a great breakfast. You make them the day before and place in the fridge overnight. No cooking is involved, so you can make this quickly and have breakfast available for the next few days. Oats are full of fiber and my recipe below includes chia and flax seeds, which just give these overnight oats an extra boost. Also, as we are all trying to get more protein in, and should always start the morning with a high protein breakfast, my recipe adds in protein powder, so this is a breakfast you can feel good about having on repeat.

Ingredients:

1 cups Gluten Free Oats

2 1/2 cups almond milk or other dairy free milk

1 tsp vanilla

2 tbsp flaxseed meal

2 tbsp chia seeds

2 tbsp maple syrup

1 scoop Protein Powder (I like Ballerina Farms)

1/2 tsp sea salt

Optional: top with chocolate chips, nuts or berries

Directions:

Combine all ingredients in a mason jar. Stir well with a spoon to breakup any clumps and shake well. You may need to stir again. Store in the refrigerator overnight. Top with chocolate chips, nuts, fresh berries or drizzle with almond butter. (You can add a few teaspoons of water to the almond butter and mix well, so it makes it easy to drizzle on top!) Enjoy!
