I love chocolate! It seriously might be my most favorite thing in the world. And I love dark chocolate so I feel no guilt since it has so many health benefits. It is full of antioxidants, or flavonoids, and is rich in iron, zinc and magnesium. Believe it or not, but eating dark chocolate may even reduce your risk of heart disease by lowering blood pressure AND cholesterol. Talk about a total bonus!!

You won’t believe how easy these Chocolate Fudge Brownies are to make and how good they taste. They are made with almond flour and coconut flour, which makes them gluten-free and they do not have any refined sugar or oil in them. They also have a small amount of coffee in them, which gives them a unique flavor. All around, these are a dream come true! What are you waiting for? Get baking!!

Ingredients:

3 eggs

3/4 cup coconut palm sugar

2 tbsp maple syrup

1 tsp vanilla extract

2 tbsp brewed coffee, cooled

1/3 cup almond butter

1/4 cup almond flour

1/4 cup coconut flour

3 tbsp raw cacao powder

1/2 tsp sea salt

1 cup dark chocolate chips (I like Enjoy Life!)

+ 1/2 cup dark chocolate chips to mix into batter (optional)

2 tbsp coconut oil

Directions:

Preheat oven to 350 degrees. Grease an 8×8 pan with coconut oil. In a large bowl, whisk together eggs, coconut palm sugar, maple syrup, vanilla extract, almond butter and coffee. Whisk for a few minutes until smooth and well combined. Add dry ingredients (almond flour, coconut flour, cacao powder and salt) and continue to stir well.

In a glass bowl, or cup, add 1 cup of dark chocolate chips and coconut oil. Heat in the microwave for 45 seconds or until melted, stopping every 15 seconds to stir. Do not overcook or the chocolate will get hard and chunky.

Add the melted chocolate to the bowl of brownie batter and stir to mix well. Add remaining 1/2 cup of dark chocolate chips. Pour into prepared 8×8 pan and bake for 25-30 minutes, or until a toothpick comes out clean.

Let cool and cut into squares. Enjoy!
