Well, it’s Wednesday and what to cook for dinner?! My kids love ribs and I love a meal that can cook all day and be super simple around dinner time, when we are still finishing homework or just arriving home from sports or activities. What I don’t love is all the High Fructose Corn Syrup and modified food products you find in store bought BBQ sauces.
So I came up with a homemade BBQ sauce that lacks all the bad stuff but doesn’t lack the taste…and my kids love it!!
The ribs can cook most of the day with a dry rub on them (homemade, too, so we don’t get any MSG hidden in it!)… And the homemade BBQ sauce can be added during the last few hours to finish them off!
Slow Cooker Ribs
5-6 lbs. pork loin back ribs
2 tbsp. paprika
2 tbsp. garlic salt
1 tsp. celery salt
1 tsp. celery seed
2 tsp. fresh ground pepper
Cut ribs into smaller pieces, (2-3 ribs each) and place in bottom of crock pot that had been sprayed with cooking spray. Mix together all remaining ingredients and rub over all the ribs. Turn on low and cook for 7-8 hours, adding homemade BBQ sauce (recipe below) during last 2 hours.
Homemade BBQ Sauce
1 3/4 cup beef broth (gluten free and low sodium)
1 small 6 oz. can tomato paste
2 tbsp. spicy mustard
2 tbsp. olive oil
1/4 cup apple cider vinegar
1/4 cup liquid aminos (gluten free soy sauce substitute)
1 large garlic clove, crushed
1 medium onion diced
1/2 tsp. garlic salt
1/2 tsp. paprika
1/2 tsp. celery seed
1 tbsp. chili powder
2 tbsp. honey
2 tbsp. maple syrup
1/2 tsp. kosher salt
Put all ingredients in a medium saucepan and cook over low heat, simmering and stirring occasionally for 25-30 minutes. Cool. Place in food processor or blender and blend till smooth. Pour half of BBQ sauce over the ribs in crock pot during last 2 hours of cooking. Save remainder for dipping. Can also be used for chicken, or beef!
