I love quinoa and it has amazing health benefits, including it’s whole grain qualities and protein packed punch! I have recently been making a quinoa tabbouleh. All the yummy qualities of tabbouleh, minus the gluten in the bulgur wheat and a better flavor. Chickpeas also add protein to make this a great vegetarian main dish. You can also serve as a side dish with your favorite protein!
Ingredients:
1 cup quinoa (any color)
2 tbsp. olive oil
Juice from 1 lemon
2/3 cup feta cheese
1/2 cup chopped tomatoes
1 chopped cucumber
fresh chopped mint, parsley and basil to equal 1/2 cup
salt, pepper to taste
Directions:
Cook quinoa according to directions. Let cool slightly. Add olive oil, lemon juice, and remaining ingredients. Mix well, and refrigerate for 1-2 hours to marinate. Makes a wonderful lunch, snack or side dish for dinner! Enjoy!
