I had more over-ripe bananas that inspired me to make these AMAZING Chocolate Banana Peanut Butter Brownies! OK, so I know I said the best combo is peanut butter and chocolate, but can we please add banana to that list?!
You really won’t believe that these brownies do not have any refined flour, oil or sugar and are gluten-free, grain free and dairy free. They are fudgy and chewy just like a perfect brownie should be. I topped them with some extra dark chocolate chips (because you can never go overboard on chocolate!;-) and some chopped walnuts. Feel free to leave out the walnuts or add pecans instead!
These are perfect to satisfy that sweet tooth. Even though they are healthy, just be careful…they are so good, you will want to eat the whole pan!
Ingredients:
3 ripe bananas, mashed
1/2 cup coconut palm sugar
1/2 cup natural peanut butter (or other nut butter)
2 tsp vanilla extract
2 eggs
1 cup almond flour
1/4 cup raw cacao powder
1 tsp salt
1 tsp baking soda
3/4 cup dark chocolate chips (I like Enjoy Life)
1/2 cup chopped walnuts, optional
Directions:
Preheat the oven to 375 degrees. Grease an 8×8 baking pan with coconut oil. In a large bowl, combine mashed bananas, coconut palm sugar, peanut butter, vanilla and eggs. Mix with a whisk until smooth. Add the almond flour, cacao powder, salt and baking soda and combine to mix until well combined. Pour into the prepared baking pan. Sprinkle with additional dark chocolate chips and walnuts, if desired. Bake for 15-17 minutes, or until a toothpick comes out clean. (Baking times may vary!) Let cool and cut into squares. Enjoy!
