This recipe is going to change your life! You are never going to believe how good this is, and how good it is for you! This 5 ingredient Spaghetti Squash Casserole is so easy to make (I know I always say this, but I really want my recipes to be simple and taste delicious! It is my mission;-) AND super healthy. I promise you this tastes exactly like lasagna. It has 5 ingredients and comes together in less than an hour, start to finish, including cooking time. It is Paleo, Keto and Whole30 friendly. This is a recipe you will make again and again!

The easiest way to cook the  spaghetti squash, in my opinion, is in the microwave. Just be sure to pierce it with a knife all over a few times or it will explode in the microwave. It takes about 10 minutes to cook, and is so easy to cut once it is cooked.

I also love Alessi Smooth Marinara sauce. All of the ingredients are clean and there is no added sugar or preservatives. Plus, it tastes so fresh! You can also make your own sauce, but honestly, I don’t see any reason to since this sauces is so yummy!

Ingredients:

1 spaghetti squash

1 lb grass fed ground beef

1 lb pork sausage (no nitrates or antibiotics, I use Butcher Box for both of the above meats, as I know their meats are all super clean!)

1 jar marinara sauce (I like Alessi Smooth Marinara Sauce)

2 eggs

2 tsp Italian Seasoning

1 tsp garlic powder

salt and pepper

1 cup mozzarella cheese, divided (optional and can be omitted if you are doing Paleo or Whole30)

Chopped basil

Preheat oven to 375 degrees. Spray an 8×8 baking dish or a large oval dish with olive oil cooking spray. Pierce the spaghetti squash with a knife several times in all sides and place the whole, uncut squash in the microwave for 10 minutes on high. While it is cooking, cook the grass fed meat and pork sausage in a large saucepan over medium heat, breaking it up and stirring often until brown and cooked through. Drain off any fat and add 1 jar of sauce. Mix well.

Once the squash is cooked, let cool for a few minutes and carefully cut it in half. Scrape out the seeds and discard. Then use a fork to remove the threads of spaghetti squash and put them in a large bowl. Add the meat sauce, eggs, seasonings and optional 3/4 cup of cheese. Mix well. Pour into the prepared baking dish. Top with remaining mozzarella  cheese, if desired, or omit the cheese completely.

Bake in the oven for 30-40 minutes or until cooked through and slightly brown on top. Let sit for 5 minutes. Garnish with chopped basil, and serve with a side salad.
