Weekend mornings deserve pancakes! But when you are living an Anti-Inflammatory Way of Life, the flour and sugar don’t exact fit the plan. Well, you don’t have to deprive yourself of pancakes anymore! These 3 ingredient pancakes are Paleo Friendly, Whole30, Keto, Anti-Inflammatory and just Darn Good!

It’s hard to believe something that tastes so good could be so simple and only have 3 ingredients. The 3 main ingredients are banana, egg and almond butter, but I like to add vanilla and cinnamon, too. So technically 5 ingredients! But still, I mean, how easy! I sometimes like to throw in a handful of spinach to get another dose of vegetables. If you add spinach, you will definitely want to put this all in a blender and mix till smooth. If you are not adding spinach, you can mix these in a bowl. Just be sure to mash the banana first!

Ripe bananas work best because they are naturally sweeter and also mash easily. I hate to throw out over-ripe bananas so I either but them in my pancakes, or freeze them to throw into my smoothies!

I love to drizzle a little Pure Maple Syrup on them or just top with some berries. Either way, these are a favorite and will make their way into your breakfast rotation!

Makes about 4-6 decent sized pancakes

  • 2 eggs
  • 1 ripe banana, mashed
  • 2 tbsp almond butter
  • ½ tsp vanilla 
  • ¼ tsp cinnamon
  • Handful of spinach (optional)
  • Coconut oil or ghee or the pan

Directions:

Mix together eggs, mashed banana and almond butter and whisk until the mixture forms a thick batter. Add the vanilla and cinnamon and whisk some more. If adding spinach (you will not notice the taste but get an extra dose of greens!), blend everything in a Vitamix or high-speed blender. Heat a skillet over medium heat with coconut oil or melted grass-fed butter. Pour batter onto the pan just as you would with regular pancakes. Flip when they begin to brown and bubble.

Top with berries or maple syrup. Enjoy!
