It’s a rainy summer day here in NJ and there is not much to do except cook. So here is my latest healthy version of Blondie Brownies to satisfy my sweet craving and keep me away from diving into something else! These are gluten free, grain free and simply divine. I have finally figured out how to use healthy ingredients to make baked goods taste great. Even my 9 year old nephew said “These are out of this world!”

Ingredients:

1 cup cashew butter

2 eggs

1 cup almond flour

1/2 cup coconut palm sugar

1/4 cup coconut oil

2 tsp vanilla

1 tsp baking soda

1/2 tsp salt

3/4 cup dark chocolate chips

Directions:

Preheat oven to 350 degrees. Grease a 8 inch square pan with coconut oil.

In a large bowl, add the cashew butter, eggs, almond flour, coconut palm sugar, coconut oil, vanilla, baking soda, and salt. Mix until smooth. Add chocolate chips and stir again. Pour into prepared baking dish. Bake for 12-14 minutes, or until golden brown and a toothpick comes out clean. Let cool. Cut into squares. Enjoy!
